Oooh this finger licking dish my close friend Zubeida and her lovely kids calls (Strong-enough) "stroganoff...lol..This is a real winner in our household tender cuts of beef folded in with juicy mushrooms and smothered in a peppery creamy sauce. Served with rice of penne or ribbon pasta its the ultimate comfort food..(I know i have many),.Follow my step by step tutorial and you can really wow your loved ones with a creation that takes minimal effort. The best thing about it, you can use cheaper cuts of beef which normally cooks for many hours to get it soft. Now you can save that energy used to cook these cheap cuts of beef in a fraction of the time on stove. Braise 1 large Onion or 2 small onions, 2 sticks of cinnamon and 2 cardamon pods in a Pot. ( i used a flat large based AMC pot. but any heavy based pot will do . After onions are braised soft add 1 chops yellow pepper/red pepper. 2. Once its well braised ...add about half kilo steak. You can use cheap cuts of beef as well since it will slow cook for several hours. 3. AFter cooking for 20 min on stove (give 30 min for beef pieces ) add 1 punnet mushrooms sliced. and cook for another 5 minutes place in Wonderbag for about 4 hrs. minimum Do not open the pot. 4. Once opened after 4 hrs everything is cooked now you add the creamy ingredient: CREAM half cup will do..If you dont like cream then 1 tablespoon of flour mixed in with some milk will suffice. Major Wonderbag Fans who are successfully cooking the Wonderbag way. Thanks for your ideas ladies. To make the masala, braise 1 onion in some oil till soft ad translucent. add 1 tomato grated. Add spices (Chilli POwder, jeera, koljana powdered, tumeric, and freshly pounded garlic and ginger paste) jeera seeds also great option. 1 tsp tamarind add some water and allow masala to simmer for about 5 minutes. Add the slices of fresh snoek.. Allow to cook for 3 minutes..top with fresh coriander and place in wonderbag to continue cooking the fish In Bag minimum about an hour or 2 Ready and steaming hot..and fish is soft and succulent..not dry When you have a large family like me frying rotis takes a long time. The reason being that while you frying, little ones struggle to resist that warm buttery smell coming from the kitchen. Frying in advance is essential to prevent you from being bound to the stove just before dinnertime. The Wonderbag is perfect for keeping your rotis hot for a few hours instead of reheating in microwave. Just wrap the plate with rotis in with foil and place in Wonderbag till serving. Works like a bomb! From your butcher request they remove the gland in the leg as it may not kill you but it changes the taste of the leg to be more gamey. Make slits in the flesh all over the leg and in each slit place a clove and a piece of fresh garlic. sprinkle salt, pepper, rosemary, (i used mixes herbs) and squeeze the juice of 1 Orange all over the leg. Allow to marinate for a few hours. Brown leg in a pan on both sides Put it a slightly deeper pot with 2 quartered onions and a few carrots and 1 cup of water. Please note : the pot shouldn't be too big as the empty space in the pot will cause the pot to lose heat. 30 minutes. I always use the timer on my stove..or if you dont have one use the timer on your phone. Placed in the Wonderbag before going to bed around 11ish Leg Roast Cooking in Bag Overnight Next morning at 7am i was sooo excited ...WOW Cooked!! Sliced it up ....OOooo tender and D.E.V.I.N.E The leftover stock i reduced on high heat to make a gravy. Pureed the carrots and onions and threw it back. If its not thick enough add some brown onion soup or maizena to thicken. Pour over Slices of Leg and serve. I find it best to slice the leg before serving because then its not that everyone is hacking the leg to pieces..its more controlled slices.and its more juicier cos all the slices are covered in yummy gravy. Winter is here!! To me and many other it means warm bredies, soups and lotsa weight gain. But this healthy dish is a firm favourite among the fussiest eaters. Check it out! Braise 1 large onion in a tablespoon of oil till soft and add lamb pieces. to braise. Why is my meat so brown u wonder? in this case i browned the meat before braising the onion. I threw the meat in a preheated pot and when it turned brown i removed it and threw in oil to braise onion .You can do the same if you want Prep the green beans by removing the ends and cutting up. Also peel potatoes and cut into blocks After the meat has been in pot for about 15 min..add your veggies to pot with salt and pepper to taste..some people add peppecorns and allspice for a more spicier bredie. I also added some water just enough to losen the meat juices stuck to bottom of the pot. mix it through let it cook for a further 15 minutes (altogether 30 minutes on stove ) excluding braising time. I left my food in bag for 4-5 hrs but 3 hours is enough.It was hot and ready to serve when i opened up. I've been demoing the Akhni but hardly shared my recipe yet :) so here goes the recipe for the Akhni.. Its so super easy i dont see the point of buying when u can make your own pot. its like curry and rice in one pot.! Braise 1 large Onion in some oil till soft Add 1 kg of lamb pieces and 1 tablespoon garlic ginger paste Add 1 large grated tomato Add spices (1 tsp cayenne powder/chilli powder, 1 tsp borrie, 2 tsp koljana powder, 1 tsp jeera, 1 tsp barishap, 1 stick cinnamom, 2 pods karamonk) you can add more spices if you like for a spicier akni .) Let this mixture cook for 15 minutes on stove. then add 2 quartered potatoes.and some diced carrots if you like. Cook for further 10 minutes then add 2 cups basmati rice and 2.5 to 3 cups of boiling water. The water must cover all the rice Add half cup buttermilk , a stick of pure butter and fresh koljana.boil a further 5 minutes. When it goes into the wonderbag there must still be water in the pot. Check picture below. Leave in Wonderbag for at least 3-4 hours... NB:Chicken Akhni needs less time on stove. The Akhni looks like this when it goes into the Wonderbag. After about 3-4 hours in the Wonderbag ....It is ready to serve. With Dhai (combination of buttermilk and finely crushed green chillies garlic and koljana and seasoned with salt) or sambals.. After borreling for 15 minutes remove from stove..note the potatoes still raw? 1 hr later .food ready potatoes soft ..quick and easy delicious and nutricious. mince curry. with roti (WHich im hopeless at making btw..always comes hard. |
